Tomato on toast

This has to be one of my favourite breakfasts, especially in summer. Whenever we have spinach&ricotta cannelloni i make sure I leave a little ricotta so I can make this the next day. 


I use low-fat ricotta and find its much cheaper at my local Italian grocer than at the supermarket. The basil is from my garden and I prefer to use homegrown tomatoes but we don't currently have any tomato plants (dropping *heavy* hints for my birthday, though!!) so these are regular supermarket tomatoes. I top the whole thing with liberal sprinklings of salt and pepper then slice it into little bite-sized pieces to eat. 

The whole thing came in at just under 300cals, making it suitable for people doing the 12wbt too!
